Carrot Cake recipe

Here is a classic recipe for carrot cake with cream cheese frosting:

Ingredients for the dough:

2 cups flour
2 cups sugar
1 teaspoon of baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground coriander (optional)
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1 1/4 cups vegetable oil
4 eggs
2 cups grated carrots
1/2 cup chopped pineapple (strained from juice)
1 cup walnuts, chopped (optional)


Ingredients for cream cheese frosting:

225 g cream cheese, room temperature
1/2 cup butter, soft
4 cups powdered sugar
1 teaspoon vanilla extract


Instructions:

Preheat the oven to 175 degrees Celsius. Prepare a baking sheet lined with baking paper.

In a large bowl, combine flour, sugar, baking soda, baking powder, salt, and all spices.

In another bowl, mix vegetable oil, eggs, grated carrots, pineapple and walnuts (if using).

Gradually add the dry ingredients to the wet ones, mixing well.

Pour the dough into the prepared form and bake in a preheated oven for about 30-40 minutes, or until a wooden stick inserted into the center of the cake comes out clean.

While the cake is baking, prepare a cream cheese frosting. In a bowl, whisk cream cheese and butter until fluffy, then add powdered sugar and vanilla extract. Beat until a smooth consistency is obtained.

When the cake is completely cooled, apply the cream cheese frosting on top. If desired, decorate with pieces of walnuts or carrot shavings.
